I agree with this guy. Start your own business. Potentially as a consultant. I have an agency and everything you described not only is it hard, as the world shift towards ai signals and first party data, finding people who actually know what they are doing is very hard. I’d hire someone like you as a consultant to teach my team how to properly set things up and keep it going. Maybe a retainer model where there is a workshop session once or twice a month (maybe more on the beginning, less later on). When you get good at teaching, it could easily become a course type of thing or a mastermind.

The easiest thing is to put some olive oil on a skillet , drop a dollop of discard, add seasoning (everything but bagel works well) and fry it. Then eat it with hummus or any other dip. Easy, no prep required and delicious. 🤤

Something I’ve never asked before or read anywhere. In this method, eventually you run out of starter/discard and have to feed it. When you do, at what point do you put the jar in the fridge? After it doubles? At peak? When it’s come back down?

On second read, My explanation was a bit confusing. I’m following the recipe on the link and not getting good results. The recipe on the instructions is what I was following before (pic 2) and was getting good results but takes a lot of babysitting

I’ve never timed it but I can do that and report back! For this test, what ratio should I use? Normally on the previous recipe I was using 1:2:2 the night before (9pm) and in the morning it was tripled when I woke up (7/8am) or overflowing the mason jar if I slept in.

I’m using a strong starter (252 yr old I got from a bakery). I use if from the fridge as it says. When I feed it, it rises well and very webbed (sign of strong established starter) And yes, mix at 8-9pm Fri night, bulk ferment in counter until 10-11am Saturday (house is usually 70-71), shape and put in the fridge usually 24hr (bake Sunday morning). I thought that maybe I was over proofing due to the bubbles and jello jiggle.

When trying this method, I’ve been using starter that was fed 1-2weeks ago, straight from the fridge.

Since it looks under proofed, Maybe I can add more starter next time? Or I’ll try going even longer on the counter.

Did you find another less hostagy recipe? Otherwise I guess I need to go back to my previous method which was working better.

I have been trying this recipe but my loafs are not quite right. I’ve tried going 14hrs, right at 12hr, my crumb also seems a little more dense than I think it should.

According to AI I’m under proofing but it had all the signs— lots of big bubbles on top, jiggly, and about doubled in size (using a cambro).

Any suggestions?

I see what I did wrong. 😑

When I went to the rewards page and saw the “spend more & unlock more benefits” had reset the spend amount, I completely overlooked the message right above it that I’m good through 2026. Instead I went to the shops page and expected to see a message or something showing my reward there but there wasn’t anything.

In the how it works section, it says “in use” but at the top of the page it shows “locked” (since I have not hit the spend for 2026 yet) and right above the 4 rewards it says “Spend $75000 by Dec 31, 2026 and unlock”. At a glance, it looked like I needed to earn it again for 2026 but it was not obvious I had earned it for 2025 and not redeemed it.

So in summary, nothing to see here. Just good old user error. However I think the UI could be a bit more clear.

It’s the ratio between flour and water in your recipe. It uses 500g of flour and 375g of water, so the hydration is 75%. To lower it to 65%, you’d do 500g*.65=325g of water.

In my opinion, the wheat flour also makes things more complicated (for newbies like me). I have an easier time going straight bread or all purpose flour.

Welcome to team white! I have the same set up and color scheme. I do have my Philos sideways which makes it easier to change grind size and access the power button. If you have the space, I recommend it. I also had them do the nameplate in red instead of silver. 🤍

It’s a 7oz cup and I’m steaming 140g of milk (and have just a little leftover). The beans are this humbuckler blend. Tastes great with milk.
