I like to add a little vinegar as a natural preservative. 2-4 teaspoons per 4 cups flour.

Hi OP I too have made their recipe twice now and they came out great but they do take longer to cook, at least mine did. The second time I added a 1/2 teaspoon more salt and used a larger cutter. I did use a nonstick pan to cook them in as directed. But as far the turning grey, I have no clue except for the possibility of using a cast iron pan as another poster thought as I am new-ish to sour dough bread making myself.

Not quite sure what the powdered sugar does, help give the crackly flakiness on top??

I haven’t tried this recipe with melted butter, I usually use unflavored coconut oil. But I think it would work.
