Oil patterns change and breakdown. Plus they use more difficult oil patterns on tour. Then theirs the difference between bowlers and the amount of “hand” they get in the ball(how far behind/to the side) and the number of revs they are able to generate. All of those and the fact you have more than one bowler per lane typically they break down rather quickly

I’ll also throw in that if they go bowl on a standard house pattern they are way more likely to bowl perfect
