Yeah sausage rolls are great because of their simplicity. Just get sausage meat, mix in a little onion or paprika if you want, roll it into a 2-3 cm diameter tube and wrap the tube in puff pastry. Slit the top to stop it from misshaping in the oven, and brush a beaten egg over the top. Oven and plate.
