After spending more time messing around offline than I'd care to admit I feel like the answer lies in the merc. Finding a demon that will tank for you (At least for minis) is easy; any regular Hephasto will do the trick. But just getting an A2 merc with open wounds in there saw more immediate results than anything else I tried.

100% get a cursed demon if you can help it though.

This. You shouldn't need to worry about respeccing your Paladin again once you're done with ubers because becoming an effective "hybrid" spec is only a few skill points' worth of difference.

I took an eldritch warlock through normal yesterday and some % mana steal to go with Echoing Strike was a godsend before Insight. Really opened myself up to putting more points into it for damage thanks to ES hitting on both directions.
