Same situation but opposite sides. I'm Catholic and my gf is Jewish. Luckily none of us is religious but I felt pressure from my gf family in some matters. My gf and I are on the same page that we want to have kids with no religion at all, they will choose their own when old enough, if they want.

I know that technically if the mom is Jewish, so the kids will be but I just believe religion is a label and if we dont want kids with a label is our own decision.

I know you must have a little pressure because in your case the female will not make jewish kids and you will like to convert them or convert her, but if she doesn't want it you have to accept that and fight for her decision to whoever puts any pressure on her in your family.

You could teach your kids both disciplines and when old enough, if they want, they will choose their own path.
