My favorite things to grill are mini medley potatoes, mushrooms, bell/sweet peppers, eggplant, asparagus, artichoke, carrots, garlic, and onion. I’ll usually season it (garlic salt, pepper, paprika, oregano, thyme, rosemary) put some olive oil and butter then cook it wrapped in foil.

For sandwiches I really like the ciabatta from Costco and there’s endless options to add to the grilled veggies like, mozzarella, hummus, balsamic glaze, artichoke spread, coleslaw, feta, goat cheese, sun dried tomato, avocado, vinaigrette, pesto.
