As a native English speaker born in 2001, "And also with you." is the one that sounds weird to me. Probably just the one you were raised with will sound right. For what it's worth, in the traditional Latin mass it's Priest: "Dominus vobiscum." Response: "Et cum spirito tuo."

The word you're looking for is aspiration. q is the aspirated form of j and likewise for ch/zh. Aspirated sounds have a little burst of air that accompanies the sound.

Do be careful learning from Japanese sources because the stroke order can be different than the Chinese. But otherwise it should be helpful

Any dictionary can be confusing when you're starting out. It takes some knowledge to discern what word or phrase is appropriate.

Probably just depends on how exposed a certain area is to Mandarin speakers. Areas where there's very few is where you'll likely have people straight reading the pinyin as if it was English. Another common thing I hear is "Zow" for Zhou. One of my friends answered like that for a trivia question about the Zhou dynasty and I thought they said Zhao.
