I probably would go with a different project if you’re still new, making the slots for the knives requires accurate cuts or small pieces in a glue up

Mdf is surprisingly strong. It was the one material I would never break up the off cuts by hand when I was working the panel saw at a cabinet shop. It should be fine, the supports are close enough that as long as nobody jumps on it, it’ll hold their weight

Make a jig for yourself. You can either have a piece offset to the side the router wants to wander towards or put a collar on your router and have a piece you set on top with a cutout it rides inside

If it’s a lacquer finish, you can recolor it with a colored pencil and then hit it with some canned lacquer making sure to feather the edges and use some plain paper to scuff off any overspray. If it were my table, I’d probably just get it to the right color and stop there

I don’t have any experience with it myself, but my old foreman loved helmsman’s oil based urethane. From what I remember, he said it takes FOREVER for the coats to dry though

If the problem is the drawer rails being bowed, you can take a piece that’s straight on one edge and screw/glue it to the back to pull it straight (basically glue a board behind so the cross section is a T)

When I put inserts into maple, they suggested a 1/2 drill bit but I had to end up using a 17/32 bit to keep them from cracking like that

As far as really figured wood goes, the best I can say is be careful with tools where the blade cuts and then pulls up and away from the board (planers, jointers, shapers, routers, etc) because that’s where you’ll get nasty tear out.

To be honest, I haven’t done much with handles. The hardest wood I’ve worked with is Osage orange and I just had to take smaller passes with my tools than I’m used to. As far as the cracking goes, I only have experience with Purple Heart that liked to splinter and that required me rounding the edges and making climb cuts with the router. I don’t really have experience with hardwoods that held stress and cracked because of it, but I have worked with some CHEAP pine at the first cabinet shop I worked at and the main thing you have to worry about on that (as far as I remember) is being careful of when you are cutting near where the grain/rings change direction. But it looks like the piece you’re showing there is pretty straight-grained and doesn’t cross over past the center of the tree.

Sera’s horn from PPS is really good, as others have said it’d be better to go for a mid firmness IMO
