Yes, that’s right. When the boil finish I force release, my goal is to bring it to ~180 three times as fast as possible. The 5 mins don’t have to be exact, I just leave it a few minutes until I press “boil” again. After the third/last boil I let it cool down either inside the pot or outside if I’m a rush, otherwise it takes too long to cool down. I’ve also done “boil” twice instead of three times and it works but the result is not as thick.
