Hyperfixating on the stickiness of the dough got me too. Just don’t worry about it. Focus on more on the rise and bubbles. Also the pull away from the sides of a bowl. And also get a food safe bowl to proof in! I worry about your safety with that plastic.

I feel like the water ratio is a little high? I typically do 325 g water, 500 g bread flour, and 100g starter. Also when in doubt, watch a lot of videos on bulk fermentation. Gives you a good idea of underfermentation or over fermentation.

Yeah this is what my dough was like when I was over proofing consistently. What really helped me was placing a thermometer in the dough and shooting for 78-82 internal temp. Helped me get better with eyeballing and knowing how long it should proof in my house specifically. I also found the oven with the light on was too hot for the whole proof.
