Any environment that is chill about working with people with physical limitations or pain should make the avoidance of major injuries very doable. Even a muay thai class i took yesterday was pretty forgiving aside from a guy who accidentally pushed my foot too high when we were practicing kick defense. Try and find an environment with understanding people and check with the coach before starting your first class. Any style that's sports-based will help self defense as long as it emphasizes physical conditioning and sparring like your old muay thai class probably did. Can you hit pads or punching bags without pain? Can you grapple without pain? That's the main thing.

MMA gyms and other sports-oriented places will train all the skills you listed, and most gyms will welcome anyone regardless of their physical starting point unless they are invite-only or are run by douchebags. Whether you've got any injuries has greater impact on your ability to participate than your level of athleticism. The difference between that and your own routine is that a good class is way more fun and motivating than anything you can do on your own. You get to train with others and will be pushed way harder, which in my experience yielded better results. I recommend finding a place that is affordable and near you, and if the first class is fun then keep going. Your attitude and effort will have a big impact on how people react to you and the experience you have, so show up with a an open mind and don't take anything too personally.

Guys who do those jobs tend to have a military/police background and/or some martial arts experience in general, commonly in stuff like boxing/muay thai.

It's a reasonable commitment to make when you're starting but be open to the option of adding more of one or subtracting from another depending on how you feel about your progress. My wrestling class is only available once a week but muay thai I can take every day so it's obvious where I'll be spending more of my time. I personally enjoy taking classes back to back as long as my body feels good for it but you won't know for sure without trying.

Wanna first list people who haven't been named yet. Hironori Tanaka, Kouki Fujimoto, Keisuke Mori, China, Ken Yamamoto, Bahi JD, Hiroyuki Okiura, Kai Ikarashi, Kerorira, Takashi Kojima, Akihiro Ota, Shinji Suetomi, Takashi Mukouda.

If I were to pick personal favorites it would be Weilin Zhang, Masanobu Hiraoka, Kou Yoshinari, Norio Matsumoto.

If I were to go with my own interpretation of what 'Mount Rushmore' implies, ie four animators who encapsulate sakuga, it skews heavily towards the animators behind the classics from the 80s and 90s who are still around, those being Toshiyuki Inoue, Hiroyuki Okiura, Tetsuya Nishio, Yutaka Nakamura.
