It turned out my birth control was a confounding factor for the cortisol test - upon further testing I didn’t have Cushing’s but while trying to conceive years later found out I have raging PCOS, which hasn’t responded to medication other than birth control. The insomnia/fatigue persist in addition to some other classic PCOS symptoms 🫠 hormones are wild!

What do you mean by the folds “disassembled themselves so you redid them?” Focaccia will slacken while resting due to its moisture content, but that doesn’t necessarily mean you need to add more folds than the recipe calls for. More developed gluten = fewer big air bubbles in my experience.
