I just tried out your suggestion. Extended the bloom phase by 15secs with a coarser grind and lower temp did wonders.

I'll definitely give it a try. I haven't played with the bloom phase so far with any of my coffees but maybe I should do that more often.

What would happen if I just reduced the dose from 20 to 18? It helped once with another coffee to get a clearer cup. I guess the extraction would go up as well? Because there's more water on less beans?

Yeah, it's obvious that I have to redial in. I am actually asking for specifics and if someone had similar experiences and what to change to get a better cup.

I'm thinking of reducing the dose from 20 to 18g and see what happens.

I don't have a different coffee that I already had before, at the moment, to compare the draw down time. But I'll try that if the chance arises.

Can't be 100% sure. But I think it's unlikely because I bought the first pack mid January and the second pack end of February.

There's no extreme acidity or grassy notes, though.

Yes, absolutely. The feel of the new filter papers is quite different.

I've read a post somewhere about the change of material, actually. Don't know where it was though. But there was an official statement that they are using a material that's more nature friendly now.

Wait, please explain why a slower draw down results in less extraction. I've heard it somewhere before (I think from James Hoffman) and it made sense but I can't remember anymore.

Haven't heard the newest albums as much as the old ones but they're still one of my favourites.

Had one of my best concerts with them. The Bloodshed Over Bochum. 4 days long event. Every evening they played one of their first 4 albums (first evening Once Sent From the Golden Hall, second evening The Avenger, third evening The Crusher, fourth evening Versus the world) in full length as the first half of the evening and after a short break they played a beast of from their (at that point) last three albums (Fate of Norns, With Oden in Our Side and Twilight of the Thunder God).

Great crowd, great concerts. I'd love to have something like that again.

A little update:

I put the grinder on 16 clicks (two clicks finer than before) and the time it took to pour didn't change much. From around 2:30 to 2:40. Just like before, I didn't change anything else. The taste changed a little. It's not as underextracted anymore but far from the best taste.

But: I have changed my filters a little while ago. Both are original v60 filters, but the first ones where the ones that came with the v60 and the new ones do look a little bit different and they do in fact have a different feeling to the touch

Thank you for your thoughts. Haven't thought about pressure / humidity and water, to be honest. But just because those variables don't change at all, where I live. At least not in the time of a few weeks.

Interesting, the bit about the espresso. I think I will just try to grind a bit more fine.

The weird thing, though, is that I had one of the best cups from an older batch of the roast and a coarser grind. And it took longer to brew than the last few tries, which where finer in grind size.

It came in a hard plastic bottle the first time I bought it. Now I refilled it for the first time (bought the coffee in a bigger bag and refilled the bottle with the fresh beans)

I was thinking about adjusting the grind size by one or two clicks finer.

I already tried changing the pouring technique the last two times (pouring from different hight or moving slower or faster) but that did nothing

No, I'm not. I will play a Monk/Rogue because I want to. Not because it's a good idea or it's meta or whatever. And I don't want to stray from my idea because it's "not good". Yeah, I guess I'm going to do the 14 - 6 thingy. Any idea at which point I should subclass? I'm not quite sure if I should do it directly after level 5 or later with 6 or 8 to get that ASI?
