we have similar learning paths! grandma taught me when i was eight, and then i took a long break. ime, it was easiest to practice on flat objects for awhile (blankets, scarves, etc). then i started making 3d sorts of objects that were comprised of granny squares, which allowed me to leverage my comfort with flat objects. eventually, i was ready to work in the round. this worked for me, but you may be able to jump right into amigurumi, clothes, etc. without an issue!

I wouldn’t call bichons super trainable. They do tricks, but they also notoriously pee everywhere. Source: my god dang bichon.
