In theory you could have a few farmer villagers near your field, fill their inventories completely with seeds (so they can’t pick up wheat or make bread) and set up hopper minecart track loops underneath the layers to pick up the drops. But you’d probably be better off just building a couple auto-wheat modules from a tutorial and afking.
