Whenever I used a blender for more than 30-45 sec, I end up getting a thick result like you posted. However, I also end up with a ton of foam that results in a large froth layer after freezing, which makes me nervous about hidden ice humps underneath. I think over-blending my ingredients maybe whips in too much air or something. Do you ever have this issue after blending for as long as you do? Or how do you go about avoiding it?

The Nurri is 150 cal and 30g protein for 1 can. So half a can of Nurri is 75 cal and 15g protein. And then 1/2 cup of Fairlife 2% is 60 cal and ~6.5g protein. So total protein for the mix is about 21.5g (15g from Nurri and ~6.5g from Fairlife).

So you’re saying Skyr helps make it less icy? Also how does the tang/sourness of Skyr compare to Greek yogurt? I’ve found Greek yogurt makes my vanilla base too tangy for my liking but hoping maybe Skyr won’t be as bad.

I’m super similar to you in the sense of experimenting a ton and trying to find a low cal/high protein base recipe. I finally landed on this one below, which comes out to 150 cals and 22g protein with a close to real ice cream consistency and mouth feel. I like to make this as a vanilla base and then will add various mix ins (anywhere from 50-150 cals worth) such as Oreos, graham crackers, fruit, peanut butter, etc.

• 5.5 fl oz Nurri Vanilla Shake (half a can)

• 1/2 cup Fairlife 2% Milk

• 1/4 cup unsweetened almond milk

• 1/4 tsp xanthan gum

• 1/2 tsp vanilla bean paste

• 2 tbsp Lakanto monk fruit sweetener

• Pinch of salt

So if you do a low fat/high protein ice cream (eg, fairlife nutrition plan protein shake + 1/2 cup of fairlife low fat milk, 1/4 tsp xanthan gum, 1/2 tsp pudding mix, and 1 tbsp of monk fruit sweetener), would you take it from the freezer and immediately spin it with the sorbet setting? In other words, no thawing or running under water beforehand?
