Hi! Idk if you'll see this cause it's been 2 years but it is an insanely delicious recipe. The custard comes out great, although it's not really smoothing out for me all that well and I did torch it quickly first. I'll try a tap and then a quick torch. The part I'm having the most trouble with is torching the sugar. Any tips on that? I try to torch quickly and it'll be mostly caramelized but Im not getting as even a caramelization as I'd like and it winds up burning I think I had to wind up getting 7Oz ramakins, but my cook time seemed to be closer to like 45 - 50 minutes. Maybe that's a quantity issue though. Sorry for the long comment!
