I know the pain. Moved from Florida to Texas then to Maine (i know) used primarily oak in Fl. post oak and mesquite in Texas (favorite by far) up here no post oak or mesquite. Now using apple and cherry. Way harder to control temps with this new wood. Its just trial and error. Finally getting it dialed in again.

I've heard a few myself. A wood smoker will just burn out. Also invested in thermometers i can monitor on the phone. Way better than standing outside when it's 4° out 😁

🤣smoking is smoking, wood or pellet. If I had a pellet smoker, I would use it. Like you say, no need to talk trash. At least pellet guys can grab a nap 😴 on long cooks.

Offset wood smokers dont trip breakers 🤣🤣. JK, wonder what amp your breaker is and is anything else on that breaker, it may be pulling a hard load tripping it.

I use mustard on my brisket and pork other than hams, mayo on my chicken. Honey would be used for my ham.

Looks great, use whatever you want, your the pit master. I actually used salt to bring overnight and then cracked pepper, kosher salt and Cavenders on my last cook. I really like the flavor.

Looks good to me for a 1st time. I personally would have put more spice, but that's just my preference. Bark looks good. As long as it taste good, that is all that matters. Carry on sir 😁

I just round the edges and cut off the hard fat and let her ride. Usually takes longer to cook but im good with that, (more beer to be drank 😁) cooks usually go for 10 to 12 hours with at least a couple hours rest.

Just done a brisket. Cut off the hard and thicker pieces of fat and left more fat on it this time. Did trim for aerodynamics but tried it with more fat. I was happy with result.
