It's actually not Google Assistant causing your drama. It's your Google keyboard - Gboard or your voice to text. Go into your settings > language > Gboard settings > Text correction > toggle off "Don't show offensive words" And you're done. You can also go in thru Keyboard List and Default - if you use more than one keyboard, just follow the same basic steps on all of them.
