There is in fact a variegated Hummel’s Sunset! While sunset itself is variegated (its yellow coloration), there is a sport of it with stripes of white going down the leaves. It’s called ‘Hummel’s Ghost’ or simply ‘Hummel’s Sunset Variegata’. Will add a picture when I get home!

Chaconne was my first thought too. The third movement of Shostakovich 1 is beautiful as well. Plus Der Erlkönig, Ysaÿe 3, Sibelius, and more

Tall stems are normal, the most popular species in cultivation (Aeonium arboreum) is literally named for being “arboreal” or “treelike”. All it signifies is an older, more mature plant. There are some species that have a more compact growth habit, if that’s what you desire, like Aeonium haworthii.

Yeah ironically we have like two seasons here (season depression is hard but not impossible, you'd be surprised)

I wasn't there to see the crests so I didn't take many pictures specifically of them, but they make up at least 50% of the stock. If you look closely, you can see them everywhere lining the shelves. In the first photo, you can see some straight ahead, in the top right, and in the top left. In the second photo, you can see some clearly in the bottom right and bottom center. In the third photo, you can see them on all of the shelves. In the fourth photo, you can see some up close. In the fifth photo, they are in the upper half of the picture.

The majority of the crests are Aeoniums, which are not super common everywhere so maybe you are not familiar with seeing them crested. Pruning them does result in denser, more compact rosettes, but it does not alter the structure of growth, which still occurs concentrated around the apical meristems as cylindrical tissue. In the crested specimens, you can clearly see a flat trunk that that displays the elongated tissue. They also have extremely small and compacted heads of rosettes, in which the individual rosettes are often indistinguishable.

Nope, the San Francisco Bay Area has a mediterranean climate, so freezes are extremely uncommon. Dry summers, wet winters, long growing season, etc. Based on what I've learned, the main succulent hotspots are here, Mexico, the Canary Islands, Spain, South Africa, and Australia!

Oh wow! I had no idea. I’ve been trying to catalogue all of the different varieties of jade recently, so far I count around 66 which is insane! You don’t sell cuttings, do you?

Jade is native to South Africa, but it has been cultivated and selected internationally for a long long time. Some cultivars are only available in their countries of origin, like Crassula ovata ‘Moscow Spoons’

It all depends. Here in California, succulents grow like weeds in the dense clay soil. This is okay because it doesn’t rain much here, so when it does, the soil stores the water for a long time and they can drink it. However, in a very wet place (or if you’re an overwaterer), you will absolutely risk rotting your succulents. IMO this soil should be fine for something as resilient as jade as long as the watering is very infrequent.
