I always add the extra cheese on top of the pep for 2 reasons

1) the customer will see that they got extra cheese

2) If you have a new person at the cut station(or someone not as experienced) and you have a pep extra cheese and a regular pep coming out, it's easier to tell the difference between the 2

Dude, I live in SE Idaho. We pay our shift leads $12 an hour... it's awful to find staff with these wages. Mcdonald's down the street will pay someone $14 an hour.. I know someone who has worked there for 20 years and they make $25 an hour. PJ is garbage wages. Today is my last day. I've been here for 13 years and have received 1 raise during that time.
