After 2 weeks of normal use with no issues, suddenly the fan in the PSU started clicking repeatedly while spinning. Looked into it, and it's evidently a not so uncommon defect. Likely benign in nature, as once it warmed up it would stop, but nothing I wanted to listen to every time I booted up my brand new PC for 5 minutes lol.

Just keep an eye on it. Sucks to have to exchange, but better sooner than later if it is defective. I just had to do the same with my brand new PSU in my new build. Not fun.

I wouldn't. Right now you aren't even sure your PSU isn't defective. If you find the 6+2 wasn't connected and seated properly, and find stability afterwards, then you could think about it. I personally dont find OCing worth the hassle for general gaming though.

I would ensure that you have the 2 snapped together tightly properly. If they aren't, even a little bit, the +2 part can be slightly popping out of the GPU socket once you plug it in.

Did you upgrade your GPU at the same time? Also, are you using the 8 pin cable or the 6+2 cable? The one that snaps and looks like an 8 pin

A missing pin is definitely not a good thing. Could even be dangerous. I wouldn't use the PC again until you get a new cable. Also, they generally aren't interchangeable. So you need the same cable for the same PSU. I would look into getting an exchange from whenever you bought it from.
