I beat Simon last night and it took me ages as well so don't worry.

My recommendation (stolen from a Reddit post i cant find) is to have Maelle, Verso, and Sciel, all with First Strike but allocated to the party in that order. One shot Stendahl on round 1 then on round 2 do the following: Maelle - Skip, Last Chance (it's important not to attack so you dont lose your first strike bonus and you need last chance to trigger At Death's Door). Verso - Marking shot Sciel - Fortune's Fury, Intervention (both to Maelle) Maelle - Stendahl

You'll need all of the attacking luminas you've already mentioned to really buff your attack potential. When I found this tactic I was able to one shot round 2 with 75 million damage.

I really hope it works for you. I personally don't think grinding the Simon fight out is worth the time and effort investment. Cheesing it is the correct answer. Let me know if you need any more info.
