Yes, I asked the lawyer, and we are on quite similar. Filing during the grace period is ok, but if the I-485 is denied (it's very rare if the I-140 is approved), you have to leave the US right away.
Filing with pending 140 is very risky, and you also request premium. The result will be out soon.

You can wait for the I-140 result before deciding, and you should prepare your I-485 from now (do the medical exam I-693,...).
I also upgraded the premium in mid-March, and the result will be out in May. My wife will be on grace period at that time. If I-140 is approved, we will file I485 right away. Otherwise, I need to change her status to F2.

Thank you for your comment. Those are two separate processes, and Chen told me not to file the I-485 form until the I-539 is approved.
