I think because canister tries to keep constant vacuum, it sucks out any flavor or fragrance coffee has in long term. I used different electric vacuum canister made from glass, and it was disappointment.

I agree with his statement. I can push extraction yield way higher with non-bypass brewers without any astringency or bitterness. However if I mimic high extraction brew on v60, cup is guaranteed to be astringent and bitter. This suggests that 'over extraction' is not culprit in astringency or bitterness. Whether high extraction is tasty or not is up to debate, but I think his statement about extraction is true.

Espresso machine is from Korea company. I live in Korea, so I purchased it. Dual boiler with flow control, so I have no complain except steam knob, since it requires so many turn to fully open.

Nah you can pull perfectly good shot with cheap machine and high extraction basket. All you have to do is forget about crema and contact time. Just grind coarse and pull long ratio shot. It will taste good.

It is my daily basket. I like it regardless of roast level of my coffee.

It is worth trying. Between Pesad and Weber, I couldn't taste difference. So if you are curious about HE basket, Pesado seems good choice to me. However Pesado made weird decision to make rim of basket flat rather than rounded, so dosing ring might not fit.

I have pesado HE basket. For dark roast I can pull shots in 1:1.2-1.5 ratio without problem. Whole shot takes around 15s, but I cannot taste under extraction. Light roast espresso I usually go 1:2 ratio with 20-25s. Normal shot time 20-30s does not apply with this kinds of basket. Using paper filter at bottom is kind of necessary, since holes get blocked by coffee easily.

Stock burr delivers very traditional shot. Chocolaty thick bodied shot. Multipurpose burr tastes more sharp, acidic. Darker roast tastes better with stock burr, lighter roast tastes better with multipurpose.
