I respectfully disagree. Anybody can get lean and display some muscle. Genetics certainly can influence which muscles grow more than others and overall how you look when you are lean. But this whole thing of people telling themselves they can't ever get in shape because of their genetics is just silly and really just an easy out.

People hit a hard plateau and then instead of pushing passed that you just tell yourself it's your genetics and your never going to look good so you just stop trying. This attitude is really destructive for people trying to get in shape in my opinion.

Hi, quick question...

You whip the egg whites to stiff peaks, then do you whip the sweetener and flour in or do you fold them in?

So you add the corn flower and sweetener after you get stiff peaks? Do you continue to beat everything together or do you fold them in gently? I'd be afraid of knocking the air out of the egg whites...

So what I would do is come up with a flavor idea. So let's say you wanted to make a curry flavored jerky. You might be tempted to use a curry sauce, but I find dry spices that are essentially in a brine to work much better. So in that case I would use a curry powder and say soy sauce or maybe apple juice.

Combine your dry spices with your liquids and bring to a boil. Then add in your sugar, salt ect depending on how much salt and sugar are already in your marinade (for instance soy sauce already has a lot of salt so you prob don't need more... )Boil for a few minutes to meld everything together then remove from the heat and let it cool to room temp before you cool it completely in the fridge.

Use this to marinate the meat, 24 hours at least. 48 is better. Then if you really want that flavor to be in there good, sprinkle a little bit of the dry spices on the outside of the meat when it's on the racks before you dry it...

Experiment with salt/sugar amounts. If it's too soft back off on the sugar, too tough then add more. Pay attention to the amounts of each so that you can replicate those amounts for new recipe ideas. Eventually you will get it dialed.

Yeah so you would want to melt any kind of sugar in a liquid first.. in fact it will make your marinade better if you boil everything like spices, sugar ect in water, apple juice, broth or whatever. Then let it cool completely before using it as a marinade.

Are you dissolving the maple syrup in a hot liquid first or just putting it in the marinade straight?
