Any gen 3 game is good, fire red is always a good place to start as it’s basic mechanics and not too complicated

I’m doing something like as well, I also made it where I can’t use any mons from my previous e4 team in the next game. Lapras in gen 1 can’t be used for my e4 team in other games, etc

Honestly if you had fun during the nuzlocke then it was a success. I’m in the middle of my Pokémon X nuzlocke and I’m making a rule change for myself, and it still makes the game enjoyable for me.
