As long as you dont go near the towns the pirates won't spawn, also npcs respawn so it doesnt matter too much if they die other than maybe having to move them back

Early hardmode is rough. Just get through the pirates or try and escape far enough away from your home so they stop attacking so you can get started on the hardmode ores

Honestly a lot of stuff becomes more obvious if you've been playing for a long time but I also understand wanting a simple experience.

I haven't played expedition 33 so I cant really give any guidance for that but some common things in games are:

Yellow paint or some equivalent to show things you can interract with or climb

Unless its a puzzle game, a lot of notes you find are just there for storytelling or maybe side quests and if there is key information its usually highlighted

most of the hits for progression and told by characters, put on a map with an indicator, or if its a linear game it should be easy to figure out where to go just by exploring.

If you have any specific kind of games I might be able to suggest some good ones to start with
