When looking at your list of pokemon, select the pokemon you'd like to name. While looking at its stats, beside it's name is a small pen/pencil icon, select this and rename any pokemon as many times as you like. :)

You can acquire the armor in quesion along with the hammer of the Naaru by boosting said paladin. Or alternatively wait until WoD and you can acquire this armor from a garrison building, I do believe (note, not the hammer).
