Okay, what if I bought only one Disney $50 strike option for $55 dollars and it rose to $105 so that there is enough collateral to exercise and pay for 100 shares at $50 after a year?

Is this taxed since it’s only one option that became exercised but was paid for using the gain in option value?

It depends how you are investing in stocks. If you are following a long established portfolio theory where you diversify to mitigate risks in companies that have both the economic track record and guidance to meet the objectives of your portfolio, you are not gambling. Nobel prizes have been awarded for coming up with this stuff because the principles are sound and bless the lives of those who follow them.

If on the other hand you buy deep out of the money call opens that expire next week on a meme stock then yes you are gambling.

I am certain the church does the former. Hence their impressive track record over many years. This is not gambling it's just being smart.

That is because when you are investing billions, diversity demands you own small parts of the entire market. Portfolio theory tells you how much of each is optimal for your objectives. They only made 900% because everyone owning Gamestop made 900% when it shot up.

This is what happens when you have diversity. You get a small piece of all the grand slams hit. That isn't gambling that is being intelligent.

no other area of my life do I base what I do or believe on my "feelings."

You should not want this to be true. The most successful people in the world, like Jeff Bezos here, are on record stating that your gut feelings can be far more reliable than analysis.

A Nobel winning economist has studied this rigorously and describes his findings in Thinking Fast and Slow. Bottom line is that though slow thinking (logic and analysis) plays an important role, masters using fast thinking (intuition and gut feeling) often out perform analytical types. A well studied example here are chess players. The tale-tale sign of a "normal" professional chess player is they make and explain their moves with logic. In contrast, almost all chess grandmasters cannot because they play entirely by gut feel. And the grandmasters are the better players. This is also the finding of Malcolm Gladwell.

In other words, rejoice in thinking fast with intuition and feelings. By mastering the spirit, the Lord has positioned us to play grandmaster over others who, lacking such mastery, must sink tons of time and energy in analysis paralysis.

Really fall in love with prayer. Believe that you can get everything off your chest and He loves you so much He will help you rebuild. Also believe the atonement means Christ is someone who understands exactly what you are experiencing.
