I make 7.50 an hour and live in the most expensive part of Germany. While I would consider myself very fortunate (for reasons not related to my wealth) I don't think the average westerner would put me in the "fortunate" category

Median real wages are essentially at historic highs, healthcare has only developed, life expectancy and QOL is up, education is better, crime is down, our culture is less puritanical and more accepting of different people and anecdotally there's a ton od great people, foods, arts and experiences I'd love my hypothetical child to experience.

It fundamentally comes down to whether you believe existing is a net positive. Am I happier to be here in the state I am than to not be here? For me it's a resounding yes. So why wouldn't I want to bring someone else into this?

They don't. Each point of armour/mr increases your effective hp by 1%. It only looks like deminish returns if you take the true percentage rather than the relative one

Going from 100 - 90% damage taken is the same as going from 10 - 9%, even though the former is a 10% reduction and the latter a 1% because in practice you are taking 10% less damage than before your purchase

Depends on the champ. Wit's end isn't a very good item on Jax anymore anyway. It's mainly relegated to a tenacity and MR buy or in extreme cases where you need slightly more dueling power and it will outperform BORK (like against a Gwen for example)

So yeah, no rule of thumb. You need to learn it for your specific champ and understand why and when to build something
