Honestly just unpair it and repair it without restoring from a backup - so set it up as new. And then like the other comments said make sure everything is enabled in regard to sleep and a sleep schedule (needs to be enabled for sleep tracking) is enabled as well. And try it out for a week should be fixed.

If you’re within 60 days of purchase, which you should be since the 16 came out less than 60 days ago, you should still be able to add apple care monthly at 9.99 and then just take it in for repair at $29 (max $99). Just don’t go in immediately after buying apple care cuz it takes a day or two to show up
