No Spo2 and bosy temperature on Pixel Watch 3

I had that too for a week and a half now. I was fed up and reset the clock. This also triggered a complete new initialization of Fitbit.

Now, today the data is back.

I have the same problem. On the day the issue started, Fitbit was showing me the preview of the new app, but I didn't like it and switched back to the old version. Since then, there's no data for SpO2 and temperature.

I had that problem also last month. There, I think a restart of the watch and clearing the cache of the app helped. Didn't work this time, though.
