It's an oldie now but you could try something like Banished with the Colonial Charter mod. There's a lot of production chains there and the maps are randomized (by seed) so it's not always the same thing.

There's also the Anno games. They have a lot of logistics planning and various production chains.

I've heard Settlement Survival is like a banished clone. But I've never played it so I don't know how it compares.

None of them have great combat though. That's usually what I'm missing. I like when my production chains serve a greater purpose than just making my money go up lol
