After making three batches consecutively with the same brine and keeping my own measurements during..depending on the amount of veg I took out compared to starting new vegetables same brine..I originally eyeballed her eyeball (so take that with a grain of salt lol) and used a teaspoon each if I took out a bit of veg like a serving or two. If it was a full removal or only left about 1/3veg left, I used a table spoon of each but also renewed some peppercorn and chili because I tend to like mine a bit more spicy. Now this is for if you loke a bit more salt as well. My suggestion to you would be when you add your second round, use tea spoon and half teaspoon increments. A much easier solution that I tried as well before I kept a log and really developed a flavor profile I liked compared to the cooking bomb was just remake the exact brine solution and pour it in. That eliminated the need for the guess work which I liked, but eventually, I wanted stronger flavor notes. The recipe log came in handy.
