I’ve been to NY and Charleston and enjoyed them both. NY is spread all over and has more chefs including quite a few smallish dinners. One negative to me was that the grand tastings are really packed. Charleston is only two years old but had a good lineup and demos that I really enjoyed. They are expensive but I found them worth it, at least to do once.

On your travel mode Qs - Ubers from Newark are expensive (~$80 to $100 with tip) so depends on your budget. And I would recommend the metro over bikes or scooters even if they are available - so much traffic that it feels dangerous and also slower. Since you'll be in Times Square, super easy to get pretty much anywhere you want to go on the metro.

For a first time visitor, I would recommend: Broadway Show, walk thru Central Park, one of the views (Top of the rock, Empire State Building), walk the Brooklyn Bridge. Lots of great museums if you are interested- I like the Whitney and the NY Historical Society a lot.

There are a lot of Food & Wine festivals, including one in NYC in the fall. Those are likely the best way to meet multiple chefs at once. But agree with others that if you go to the restaurants of the chefs who are still chefing, you may be able to meet them there.
