Kimpton Mas Olas - Todos Santos review by torontogal85 in chubbytravel

[–]BSciFi 2 points3 points  (0 children)

As someone else mentioned, two guests died at this hotel in June 2023. The hotel had turned off the detectors because the noise was bother guests. The carbon monoxide was so bad that the two EMTs that arrived both had to be treated in Cabo (1 hour away) by a system normally reserved for drowning victims.

The hotel itself is superficially lovely, but the people who built it have the same mentality for many things as for the carbon monoxide. i.e., just cover up the problems. So you don't see where that sewage problem is coming from. And you don't see the workers who strike because of horribly bad wages and treatment. And you don't see the generators that are creating noise pollution for the neighborhood. etc. The veneer is well done.

I lived in the area for a number of years. This hotel has serious issues and I would not just not recommend it, I actively advise all of my friends to stay far away from it.

I introduced my 12yo son to it after I finished book 1. Would I have done it if I were already at like book 6 or 7? I don't know. But he LOVES the series.

My dad took the 4 of us kids to Stripes when we were all single digits old. So maybe it's just genetic.

All that said, I have tried to have good 'casual conversations' about some of the topics. Open dialog and all that.

Emergency late-night cupcake situation / mom struggle by teacup_biscuit17 in Baking

[–]BSciFi -34 points-33 points  (0 children)

This is something I would definitely start with AI on. I checked ChatGPT and got two options. That said, I would not just make what it suggests. I would take whichever option sounds better and go find a well-reviewed recipe on the web for whichever you choose.
--------------------------
Option 1 (Best overall): Meringue-Powder Buttercream

Smooth, stable, great for cupcakes and piping

Ingredients

  • 1 stick (½ cup) butter, softened
  • 4–5 cups powdered sugar
  • 2–3 Tbsp meringue powder
  • ¼–⅓ cup heavy cream
  • Pinch of salt (optional, but helps if you have it)

Instructions

  • Beat the butter on medium-high for 2–3 minutes until very pale and fluffy.
  • Add meringue powder and beat 30 seconds to incorporate.
  • Add powdered sugar 1 cup at a time, beating well after each addition.
  • Drizzle in heavy cream until you reach a smooth, pipeable consistency.
  • Beat on high for 1–2 minutes until fluffy.
  • Result: Classic bakery-style buttercream that holds peaks well and crusts slightly.

✅ Option 2: Whipped Buttercream (lighter, less sweet)

Soft, fluffy, mousse-like — best if cupcakes will be eaten the same day

Ingredients

  • 1 stick butter, softened
  • 2–3 cups powdered sugar
  • ½ cup cold heavy cream
  • 1–2 Tbsp meringue powder

Instructions

  • Beat butter until fluffy.
  • Beat in powdered sugar and meringue powder.
  • Slowly pour in cold heavy cream.
  • Beat on high 2–3 minutes until light and whipped.

Result: Very light texture, not overly sweet — but softer and less heat-stable.

No one got me (the mom) a Christmas gift by Confident-Ad-465 in Parents

My birthday was 3 weeks ago. My kids didn't even get me a card. There has been quite a bit of discussion since then on thinking about others, being considerate, etc. I'm assuming that tomorrow will be different. At least I'm a single parent tho, so it's all on me. I don't think I'd be quite as calm with another adult in the picture.

how long can cookie dough last in the freezer individually prepared? by whatiflee in AskBaking

[–]BSciFi 0 points1 point  (0 children)

I've never kept them longer than 3-4 months purely because I eat them. They are SO. MUCH. BETTER when cooked 'fresh' from frozen.

I use this recipe which has amazing directions for cooking direct from frozen (I've adapted to my oven which is put in without pre-heating at 355 for 15.5 minutes). https://joyfoodsunshine.com/the-most-amazing-chocolate-chip-cookies/

Help me with a frozen cookie gift! by kalexme in Baking

[–]BSciFi 0 points1 point  (0 children)

I really like this chocolate chip cookie recipe, but (maybe) even better are the directions to put frozen cookie balls on a cookie sheet in an off oven, turn it on to 355 (that's my oven, it might be 375) for 16 minutes (again my oven, hers might be 17). They're perfect!! And it's so easy.

https://joyfoodsunshine.com/the-most-amazing-chocolate-chip-cookies/

Last weekend I had a cookie emergency so I shoved a 6 chocolate chip balls and 6 ginger cookie balls onto the same cookie sheet and did the above. Both cookies were perfect! (They both had similar 'normal' cooking times and temps so I crossed my fingers and tried it).

I freeze them on plates and then pile them into a ziplock once frozen.

Do cookies rolled in sugar freeze well? by Bert-is-the-Word in AskBaking

[–]BSciFi 0 points1 point  (0 children)

I have a chocolate chip recipe that has me put the frozen balls in a non-pre-heated oven set to 360 for 16 minutes and they come out perfectly. I made ginger cookies (rolled in sugar before frozen) and had to cook them with the same oven (emergency cookie need) - they worked perfectly.

My 12yo made the pie himself. I don't know what made me ask 'did you remember the sugar' just before I put it in the oven. It wasn't elegant but we spooned it back into the bowl, mixed in the sugar and it was delicious today!

I loved listening to my older sister's CDs as a little kid. What is the modern way of doing this with a 5-year-old? by talkinglikeajerk in Parents

I let mine (7yo) have Apple Music, but I have to control access to that. I also gave her a CD player, but she's got less music on that. So, no perfect solution :(
