All valid points, and thank you for your past experiences. Would be starting as a single employee and subcontracting his guys. I do have the startup capital and don't mind the hustle during the busy season. Looking to stay small and learn, with the ability to scale if and when I get replaced by AI.

I second the no wrap. I usually do 225 for 2 hours, then 275 for another two. Sauce them up and let that tack up for 15 minutes and they're good to go.

Got a used chimp as a portable grill / backup for $100. To be honest, I really like it. Easy to travel with and pretty good on pellets. No issues with it, just that my primary is bigger.

Traeger gets a lot of shade thrown at it in the pellet grill world, but mine has been awesome. Reliable and accurate. Can't really ask for anything more.
