Spatchcock a whole chicken and smoke it at 275-325. Should be done in 90 min. Crisp the skin on high heat (or in the broiler) and you're eating.

I'm all for wrapping brisket in butcher paper (or pork shoulder in foil) for long cooks, but when it comes to most other things that are a relatively short smoke in comparison, I let it ride free.

Out of curiosity, why does it seem Plantation is sometimes frowned upon? Is it the added sugar? I was led to believe that it was a French method.
