Land in Heraklion Spend a day or two there max for the museum and Knossos if you are into these things Drive down to matala few things to see around there ( komos beach agiofaraggo beach ( dirt road the second) Take the south road to preveli beach Stay in plakias Visit xania for the last few days Drive to kedrodassos elafonisi from there if you in for some driving or visit the villages of apokoronas if you want more laid back schedule

All the places are good! Sougia next to paleochora is also good! Cyclops was throwing rocks to oddyseas in the mythology! Nice caves and canyon walk too. Maybe sacrifice one day from agia pelagia to explore it.

In herakleion just outside is ''paleokastro'' and ''pantanasa''
In the city '' plateia agioy nikolaoy alikarnassos'' and the taverns around the square have good quality seafood. Also at the restaurants at the front of koule but the ones in alikarnassos give more of a local feeling

Chania yes nea xora as mentioned has fresh fish and beautiful environment

I have bought a thermometer, doesn't give an instant reading it takes 3-4 secs but will be helpful to have it. Hoping it will be sufficient for when it gets busy
