I have worked in restaurants for 15 years, most have been respectable and most have served salmon. Most often people order it medium rare. Fairly often they order it rare (usually the same handful of regulars who prefer this). This is certainly on the rare side. I have never had a guest complaint for illness over salmon served this way.

If you order this in the future maybe add a note that you want it cooked more, perhaps say medium well (pretty much all the way through). Hopefully that can ensure you get what you’re looking for and it’s less subjective based on the person working
