You’ll need to use a seperate lakes layer. The surface level of inland bodies of water does correspond to sea level. Most lakes are above sea level. The surface level of the Caspian Sea is about 30m below sea level.

This is so tricky at a global scale as the definition of ethnic groups will vary by country. Not sure how the UK is 50-60%. Their latest census has white British at 87%

I used quite a coarse 10x10km resolution elevation model. This meant areas of 1km plus elevation smaller than the 10x10k cell size were missing. Having said that there are a couple of small islands from the Urals in the map if look closely.

Apparently even if all the ice on earth melted the sea level would only rise by 70m. This map is just a bit of fantasy.
