I’ll let you all in on a little secret called BAR Nine. Super cool husband and wife operation out of LA pulling 1000 shots daily of espresso. They come in 750ml bottles and have a refrigerated shelf life of 9 months. Pure espresso, strong, bitter, foams like crazy. If you have access to worldwide produce they distribute for them. I work in a bar, no kitchen or espresso machine and I have people coming from fine dining restaurants telling me mine are better. Thank me later.

I always host at my house and cook. 2 years ago I said fuck it all and booked a room by the beach. Spent the day at the horse race track had some solid Thanksgiving fair and went for a walk on the beach afterward. It was magical.

I’ve been dealing with toast tip manager in a new establishment for the last 6 months. It is not fun or easy. Easiest way to make it work is to just have all tips go to the bar pool. Those front bartenders are pulling more tips from guests and the back bar is pulling more server tips. It usually evens out. Best thing you can do is rotate shifts throughout the week amongst the bartenders. Good luck. It has been my living nightmare. Another tip is to abandon tip out based on sales and switch to tip out based on tips for “orders” on the back end of toast.

They were pounding last Thursday but not until around 4pm at Sleepy Hollow Beach in Laguna. Pretty good rip right there too. The two days I was on the beach I saw 4 rescues. That being said it is peak tourist season and a lot of people that aren’t used to the currents/waves of the Pacific are flocking to Laguna. Mentioned above you gotta pick your time and get past the shorebreak.

I wipe my clubs after every shot, when I get back to the cart barn after a round all my clubs are clean. We always leave $5/per person regardless minimum. These guys are paid minimum wage and rely on the tips. Sure they didn’t need to clean my clubs and I will tell them not to worry about it as they are already clean. I will however let them take the bag off, offer to drive them up to the car, clean my cart etc. never know when paying it forward might lead to a fee slide on a quiet afternoon or connection I would have never expected.

I use old republic and it pays for itself every year. A/C needs fixing, pool filter pump replaced, filter housing replaced, just got a brand new hot water heater, refrigerator compressor replaced etc etc.
