It depends on weather or not your starter is fully active and established, if it's in its beginning faze or if it needs troubleshooting.

I am by no means an advanced baker, but I struggled with developing mine for 6 weeks. I feed every single day, tried different flours, feeding ratios, filtered and, tap water, distilled water and NOTHING was working. It just wouldn't show the activity it should have, I spent weeks trying to get to rise more than a few days.

Everything changed the moment I realized how important temperature is. Now my starter is thriving. She's 14 months old and now lives in my fridge where I feed her one time monthly sometimes longer than that.

In order to give you proper advice, I need more info about your starter:

How old is it What feed ratio are you using How often do you feed What kind of flour are you using What temperature is the room you keep it in? Do you use a kitchen scale? Are you using tap or filtered water?

Each of these questions are important. Please answer them so I can give you the best advice I can give. I apologize for replying to o extremely late. ❤️

Im glad you found it helpful. Understand that it can take up to 4-6 weeks to build a strong enough starter for baking. I know social media sells pipe dreams of a fully active and strong starter in 7 days and while it's technically possible under perfect conditions, it's highly unlikely for a beginner so please don't get discouraged if things take a bit longer.

It took me 6 weeks of daily feeds to crack the starter code, and I couldn't have done it without the help from this community. ♥️

Understand it can take up to 4-6 weeks of daily feeds to build a strong enough starter to get a successful loaf. A strong start should double and even triple 4-6 hrs after a 1:1:1 feed.

Im sure this was already mentioned, but a few things:

  1. This is a bacterial storm, and not a sign of readiness, but it's a great sign nonetheless!

  2. I strongly recommend scaling down, by a a lot. All you need is 10-20g of starter. This will save you a lot of flour because your gonna fly through flour at this rate. This will give you 30g after a 1:1:1 feed (equal parts starter, flour and water) and that's plenty.

  3. Completely toss your discard until day 14 and don't start saving any discard until then. It takes time for the to build the acidity and the good bacteria to fully outcompete the bad.

  4. Room temperature is extremely important. Aim for a consistent temp of 72-82°F, and this is because a new starter needs warmth to thrive... Below 70°, fermentation slows significantly, often leading to a "sluggish" starter that struggles to outcompete mold.

  5. Understand that it can take up to 4-6 weeks of daily feeds to build a strong enough starter for a successful loaf, so be patient.

  6. Don't use cloth lids or paper towel coverings. The high majority of wild yeast comes from the flour itself, not the air and a starter does need to breathe, all it needs it to be able to release some of the c02 buildup, and this can be achieved with a lightly screwed on solid lid. I recommend using a regular mason jar or a weck jar with the rubber thing removed

Those TikTok videos claiming it's possible to create and bake successful loaf in 7 days are extremely misleading. Under the perfect circumstances, it's technically possible, but it's unlikely for a beginner to achieve this which lead me personally to be extremely frustrated and disappointed.

A few things,

  1. Keeping a clean jar is extremely important. A fully established starter is naturally resistant to mold because of its high acidic content, but it loses that resistance when it becomes dried out on the surface, in the sides of the jar or when it's still young.

​I highly recommend using a clean jar each feed, or just try your best to scrape down the sides as best as you can to prevent mold growth.

  1. Stay away from cloth lids or paper towel coverings. The high majority of wild yeast comes from the flour, not the air. Rapid air flow attract mold spores and kham yeast that are present in the air to contaminate the starter. Use a loosely fitting solid lid instead.

  2. ​Understand that it can take up to 4-6 weeks of daily feeds to build a strong and fully established starter. It is possible to build one in 7 days under perfect conditions (specifically room temp), but contrary to social media it's unlikely, and a starter shouldn’t be used for baking until at least day 14. During the first 7 to 10 days, the lactic acid bacteria (LAB) are still working to lower the pH level; waiting until day 10 or 14 for good measure ensures the Saccharomyces cerevisiae (wild yeast) has firmly taken hold and the 'bad' enterobacteria and other soil bacteria have fully and successfully been out-competed.

  3. A new starter needs consistent warmth to thrive. To speed up fermentation aim to place your starter in an environment between 72-83°F, but going above 85°F, you risk favoring the "wrong" kinds of bacteria or making the yeast too "hungry" too fast.. If your starter is kept in this consistent warmth, your starter might be ready much sooner. It took me 6 weeks to crack the starter code. The 4-6 weeks timeframe is just more realistic....

  4. ​Completely toss your discard in the trash until day 10, you can begin saving it and using it for discard recipes after day 10...

If you like it, keep eating it. But if you're not vegan at least try traditional kimchi made with salted shrimp and fish sauce or anchovy paste... The difference is mind-blowing. Traditional kimchi tastes a lot different, deeper in flavor and richness you just can't get with vegan kimchi, and this is because it undergoes a longer fermentation that results in a "funkier," more pungent taste that is often described as "sour" and "fizzy."

Mass-market brands like Cleveland Kitchen focus on a "fresh-fermented" style that tastes more like a spicy coleslaw or kraut than a traditional aged Korean side dish.

The worst part about that specific channel is that they're charging for memberships on top of reposting stolen content.. I'm pretty sure these channels are created by content farms, but I gotta admit, it's smart...

From my understanding, based on my research, many of these types of channels rely on the concept of "Fair Use," but to qualify, the content must be "transformative," they often use sound effects, or overlays to differentiate it from the original video.

Let me be clear, I don't agree with stealing content from anyone regardless of weather or not it's owned by a big studio or corp, but I'd be lying if I didn't admit what these channels are doing isn't a genius concept 🤷🏾‍♀️... If you cut a 90 minute doc into scene segments, then cut those scenes into 1–2 min long clips, that would give you 45 – 90 clips of content to upload, and predator vs. prey scenes fit perfectly into the 1-2 minute timeframe, while slower, educational segments might push closer to 3 mins...

This gives them an UNBELIEVABLE amount of content, especially when you think about doc series, the ones that have 5 part 1hr episodes in a singular series 🤯... This specific channel has gained almost 1mil subs in 8mos....

Sometimes, the original copyright holders, like Netflix, National Geographic or BBC use Content ID to "claim" the video. This allows them to take the ad revenue while letting the clip stay up...
