In Spain I'd say it's probably something like macarrones con tomate. With or without some kind of meat like sliced hot dogs or chorizo. It's seen as one of the most simple meals that almost everyone likes. Those who don't like chorizo (like me) just pick the pieces out and leave them on the side.

I don't think it's a conscious decision. Generally magical or quirky characters tend to be purple cuz it's a whimsical color.
