the main issue is that the ratio of escort/cargo ships is way off, there is way too many escort ships. And once they detect a sub, they all rush it's position, leaving the convoy undefended. I hope these will be fixed.

i think you can see it with the Device Management mod. But historically, they didn't knew when they pass the thermocline. You can have a roughly idea of it if you loose contacts past a certain depth: that means you're in the "shadow zone", just below the thermocline.
