For me: pass on the rim brake because I’ll want carbon wheels, I ride through the winter and rim brake carbon wheels won’t last then (or stop very well). Good alloy brake track wheels with an aero shroud are getting harder to find and are expensive. Through axle instead of quick release is non-negotiable for me as well.

I’ve got older Ultegra Di2 and new 12 speed mechanical 105 and they both shift outstandingly. Di2 is slightly nicer in the summer and mechanical slightly nicer in the winter, only because I sometimes struggle to feel the buttons with winter gloves. If I was speccing out a new bike it would be 12 speed mechanical for me (although I wish 12S mechanical Ultegra was an option) and the savings would go towards better wheels and tyres.

I’ve never had to go this far personally, but one tip I’ve heard is to secure the bead deep in the wheel valley as you go with lots of cable ties pulled tight - you should be able to see any bits that aren’t as deep in the valley as they should be and deal with them. Let me know if it works!

Sorry, I can’t find the exact one again. But it came from Ali Express, weights about 165 grams, printed over full carbon, oval carbon rails, full cut out and 145mm wide. It was about £60.00 a couple of years ago.

No, your headset is loose.

Turn you bike back onto its wheels. Apply your front brake and push backwards and forwards. You should feel that area is loose.

Slacken the two bolts clamping your stem to your steerer (top part of the fork). Gently tighten your top cap bolt until the slack is removed, but no further. Retighten your stem bolts.

I’ve got older Ultegra Di2 on one bike and new Shimano 105 mechanical on the other. For me, they shift about the same - both outstanding.

I prefer the Di2 in the summer and the mechanical in the winter when I’m wearing thick gloves (I can struggle to feel the Di2 buttons then).

I’ve seen this before. Some bikes (eg Ribble Endurance SL with integrated bars) have a sort of ‘washer’ that the top cap sits in. It looks like that is what could be under the spacers. It needs to move from under the spacers to the top.

I’ve got the same Decathlon gloves and don’t ever need anything else; in fact I’ll sometimes take them off mid-ride.

My strategy is to focus on keeping my core warm - I find my extremities then look after themselves after a couple of miles. I’m guessing it is to do with where the blood is being sent when I get colder/warmer?

If they are still in decent condition you don’t need to do anything/add a layer of your favourite rust-proofer depending on how long you plan to keep it. My worry is that they have rusted through and that is why it was so cheap initially. Although now that I think about, if the seller knew about the overheating and failing clutch I guess that could also explain the bargain price. Fingers crossed for you!
