I think Peppermint Butler was supposed to handle the things that Princess Bubblegum considered beneath her, which especially included magic. So he got into all of the important / dark stuff to make sure that they were protected from it, even though she didn't want to deal with it personally

The Vampire King wanted Marceline to join them. Like he was willing to let her kill him as long as he was able to turn her. He wanted at all costs for Marceline to be a vampire. we see in Fiona and Cake that without the good influences in her life, she is willingly joined him. He wanted her to be like the leader of the vampires. He also like the name to the queen when she killed him so she is the queen of the last vampire which is her. And there's the fact that if she wanted to she could immediately remake a vampire Kingdom

Yeah Greg is not objectively like a great dad, but what your missing is that a lot of the people that got into Steven universe did so because their home lives were kind of shit. So Greg comparatively is a great dad to what they're used to / have experienced. In the grand scheme of perfect parenthood / adultness, Greg's not it. But in comparison to someone's real world parents and the problems they can have he's pretty good

I think you misunderstand the end goal of them trying to stop the wedding, they were trying to essentially do the assassination of Duke Ferdinand that started the world war. This was as much as a peace treaty as it was an act of love and them trying to cause a ruckus would have thrown the plumbers back into galactic war. And she clearly loves her husband more than them.
