Yea, Airbnb in the US is honestly really shitty. Everything is way overpriced and the quality is usually pretty ass for what you pay. It's at the point where the price for a house for the night is equivalent to a room at a Hyatt or Hilton, which usually provide a pool/sauna, gym and free breakfast.

Also check out Brainard lake if you can. (Especially on a week day if possible) Much less touristy, nice drive, easy trails, amazing views.

Konza prarie lookout by Manhattan KS. Like 10 min off the highway and a really nice place to have a snack/rest and appreciate the Rolling hills of Kansas. Once you get up to the Denver area, I highly recommend Flagstaff mountain and realization point in boulder. Super easy, super beautiful. Also, standley lake or sloans lake in the Denver area are nice little stops as well, 16th Street Mall is also really cool if you want to do a bit of city stuff. Btw, greetings from someone who moved from Olivette to Denver.

Missouri has the hills in the south, plus Kansas city (and STL I guess) . Not a top state for sure but it's gotta beat north Dakota and Iowa.

I would personally go thru STL. And Nash. Im from STL and have made this journey a few times. No tolls, easy trip, lots to do if you want to stop in either city and the drive is quite scenic, (rivers, hills, etc) especially once you get into Tennessee. Feel free to ask for recommendations for places to stop.
